Starter

Roasted scallops with yuzu butter, carots,

goat cheese from Corsica, clementine and green celery juice

 

Rabbit terrine with foie gras and peanuts,

pineapple jam and organic maple syrup

 

Blue lobster served on top of a ginger and kumbawa gely,

lime paste, homemade ketchup,

artichokes, oignons et condiments 

 

Fish

Norvegian skrei flavoured with vanilla,

potatoes, rolls of seafoods and shallots,

roman lettuce and "beurre blanc" sauce

 

Roasted turbot, celey purée parfume with aragan oil,

leeks, black truffle shavings, fish bones juice, 

celerisotto and cold Comte cheese

 

Fera filet, safran polenta, confit fennel,

sweet and sour olives, fresh corn and dolce forte sauce

 

Meat

Half pigeon roasted with anis, blackberry juice,

turnip and gingerbread purée, pear, walnuts and chestnuts

 

Iberico pig cooked with garlic and pepper, parsnip purée,

dauphine potatoes, salsify on chesnuthoney and black truffle

 

Red Label veal flavoured with lemon, beetroot gnocchis,
